Not your Grandmas Meatloaf

In this episode we take a classic recipe and give it a new twist. Meatloaf is a staple in every house. We take meatloaf and stuff it with mozzarella cheese + bratwurst and then smoke it. We hope you enjoy.

Recipe:

  • 1 LB GROUND BEEF

  • 1 LB GROUND SAUSAGE

  • 1 CUP BREADCRUMBS

  • 1/2 CUP MILK

  • 1 TBSP ONION, CHOPPED

  • 1 TBSP PARSLEY

  • 1 CLOVE GARLIC

  • 1 TBSP DRY RUB

  • 2 TSP SALT AND PEPPER

  • 1 EGG, BEATEN

  • 1-2 BRATS .

PREPARATION

When ready to cook, get SMOKER temperature to 230-250℉. Combine breadcrumbs, milk, onion, parsley, and S&P. Add beaten eggs. Mix both ground beef and ground sausage and combine all other ingredients then mix well. Form mixture into a loaf, packing tightly. Push down the brat sausage in the center then a layer of mozzarella cheese, then cover with remaining meatloaf. Coat the outside of meatloaf with your favorite dry rub seasoning. Place meatloaf directly on grill grate, and cook for 2 hours, or until it reaches an internal temperature of 160℉. Glaze meatloaf during the last 20 minutes of cooking or when internal temp hits 150℉. (Glaze- choose your favorite bbq sauce and do 1/4 cup of apple cider vinegar with 1 cup of bbq sauce) Let meatloaf rest 10 minutes before slicing. Enjoy!
