Smoked Meatloaf

2 teaspoons vegetable oil
1 onion, chopped fine
2 garlic cloves, minced
2/3 cup bread crumbs 
1/ 3 cup whole milk
1 pound lean ground beef
1 pound ground pork sausage
2 large eggs plus 1 large yolk
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
1/2 teaspoon dried thyme
1/3 cup finely chopped fresh parsley
¾ tsp salt 
½ tsp black pepper

  • Mix all together and shape in a pan or tin foil.

  • Place on smoker at 225, after 2 hours turn up to 350 until internal temp reaches 160. Once at 160 glaze meatloaf with your favorite BBQ sauce and let it sit for another 15min.
